Quaker Chewy Choc-Oat Chip Bars
Quaker® Chewy Choc-Oat Chip Bars

These gooey bars make the perfect lunchbox treat!

INGREDIENTS

  • 1 C. (2 sticks) Margarine or Butter (softened)
  • 1 C. Firmly Packed Brown Sugar
  • 1/2 C. Granulated Sugar
  • 2 Tbsp. Milk
  • 2 tsp Vanilla
  • 1 3/4 Cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt (optional)
  • 2 1/2 C. Quaker Oats (quick or old fashioned, uncooked)
  • 2 C. Semi-Sweet Chocolate Chips
  • 1 C. Chopped Nuts
  • 2 Eggs

INSTRUCTIONS

  1. Heat oven to 375°F.
  2. Wash hands with soap and water.
  3. Beat margarine and sugars until creamy. Add eggs, milk, and vanilla; beat well. (Food Safety Tip: Don’t forget to wash hands again after cracking your raw eggs!)
  4. Add combined flour, baking soda, and salt; mix well. Stir in oats, chocolate chips, and nuts; mix well.
  5. Press dough onto bottom of non-greased 13×9-inch baking pan.
  6. Bake 30-35 minutes or until light golden brown.
  7. Cool completely; cut into bars. Store tightly covered.

Try replacing 1 Cup of Butter with 1/2 Cup of Applesauce for a lower fat option

Build Your Own Pizza Lunch Box with Fresh Fruit Kabobs

With a handful of simple ingredients, your kid can put together his or her own personal pizza! Feel free to get creative with this recipe to add any favorite veggies to the pizza!

INGREDIENTS

Pizza
  • 1 Whole Grain English Muffin, sliced
  • 1/4 C. Low Sodium Pizza Sauce
  • 1/4 C. Food Club Part-Skim Shredded Mozzarella
  • 1/2 Fresh Red Pepper
  • 1 Slice Dietz and Watson Deli meat, ripped into pieces
  • 1 Handful of Spinach, finely sliced
Fruit Kabobs
  • Grapes
  • Watermelon, cubed
  • Blackberries
  • Skewers
  • Yogurt (as a dip, or by itself!)

INSTRUCTIONS

  1. First, wash your hands with soap and water.
  2. Gently rub your grapes, blackberries, and the outside of your watermelon (before cubing) under running water. Then, assemble your fruit kababs! Slide fruit onto skewer. (Tip: Parents, consider cutting the sharp point off the kababs!) Set kabobs aside.
  3. Rinse your red pepper under running water and cut into small pieces.
  4. Place pizza ingredients into bento box spaces for your child to assemble at lunch. If assembling now, lay each half of the English muffin facing up. Spoon sauce over both halves. Sprinkle with cheese, peppers, deli meat, and spinach to enjoy!

Turkey Roll-Ups aka Lunchbox Sushi

A fun finger food! These tasty roll ups look like sushi and are packed full of veggies. Round this lunchbox out with popcorn and apples with nut butter, and you have a tasty lunch!

INGREDIENTS

Roll-Ups
  • 2 Slices Dietz and Watson Turkey Deli Meat (Try ham, turkey and roast beef!)
  • 2-3 Tbsp. Low Fat Cream Cheese
  • 1 Handful of Spinach
  • 1/2 Fresh Red Pepper, chopped
Complete your lunch
  • 1 Apple, sliced
  • 2 tbsp. Peanut Butter
  • 1 Snack Pack of Popcorn

INSTRUCTIONS

  1. Wash hands with soap and water.
  2. Gently rub the red pepper and apple under cold running water. Set aside.
  3. Chop the red pepper into small pieces. Set aside.
  4. Assemble your sushi roll! Lay 1 slice of deli meat out flat and spread low fat cream cheese across it. Next, place the spinach and red pepper pieces on top of the cream cheese. Press the veggies into the cream cheese to help keep them in place. Roll up your sushi! Cut the the sushi roll into pieces. And repeat for the second roll. Your sushi is ready!
  5. Cut the apple into slices and place in a to-go container.
  6. Place peanut butter into small to-go container.
  7. Add the snack pack of popcorn to the lunchbox!

Savory Blueberry Pecan Flatbread

Have a plan, Have A Plant™. This recipe is a perfect way to enjoy more plant-based foods as a nutritious lunch, a fun snack, or a party appetizer.

INGREDIENTS

  • 1 lb. Pizza Dough
  • 1-1/2 C. Grated Mozzarella Cheese, divided
  • 1/2 C. Crumbled Gorgonzola Cheese
  • 4 oz. Drained Pancetta (bacon or ham if pancetta not available), cooked and drained
  • ¼ Thinly Sliced Red Onion
  • 1 C. Fresh Blueberries
  • 1/4 C. Thinly Sliced Fresh Basil
  • 3/4 C. Pecan Pieces, toasted
  • Freshly Ground Black Pepper

INSTRUCTIONS

  1. Preheat oven to 450° F.
  2. Lightly flour a work surface. Pat and stretch dough into a 10 x 14 oval; place on a large baking sheet. With a fork, pierce dough in several places.
  3. Leaving a 1-inch border, sprinkle dough with half the mozzarella, the gorgonzola, pancetta, and red onion.
  4. Bake until crust is golden brown, 12 to 14 minutes.
  5. Sprinkle blueberries, pecan pieces, and remaining mozzarella over flatbread; bake until cheese is melted and crust is golden brown, about 2 minutes longer.
  6. Remove from oven; top with basil and pepper.

Wonton Taco Cups

INGREDIENTS

  • 3/4 Lb. Lean Ground Beef
  • 1 Tbsp. Low Sodium Taco Seasoning
  • 1/2 Tomato
  • 2 Mini Sweet Peppers
  • 1/4 Small Sweet Onion
  • 1 Tbsp. Chopped Cilantro
  • 24 Wonton Wrappers
  • 1/2 Cup Shredded Lowfat Cheddar Cheese
  • 1 Avocado, chopped

INSTRUCTIONS

  1. Preheat oven to 350F. Spray 24-cup mini muffin pan with nonstick cooking spray and set aside.
  2. Heat large nonstick skillet over medium heat. Add ground beef and cook 5-7 minutes or until cooked through. Drain and return to pan. Add taco seasoning and mix well.
  3. Add tomato, peppers, onion and cilantro to food processor and chop until fine (or finely chop by hand). Add to ground beef and mix well.
  4. Line muffin pans with wonton wrappers, place 1 in each cup. Add taco mixture and top with cheese.
  5. Bake 12-15 minutes, or until wontons start to brown on edges.
  6. Top with avocado.

Sweet and Savory Burrata on Toast
Sweet and Savory Burrata on Toast

INGREDIENTS

  • 8 oz. BelGioioso Burrata Cheese, drained
  • 2 Tbsp. Golden Raisins, plumped in hot water or rum, drained
  • 1/4 Cup Toasted Walnuts, coarsely chopped
  • 4 Slices Sourdough Bread
  • 6 Tbsp. Apricot Preserves
  • 2 Tbsp Apple Glaze or Syrup (or other fruit glaze)

INSTRUCTIONS

  1. Chop the drained Burrata and transfer to a mixing bowl.
  2. Stir in plumped raisins and toasted walnuts. Set aside. (Note: Do not prepare more than 2 hours before serving).
  3. For each serving, toast one bread slice. Spread with 1 1/2 Tbsp. preserves. Top with thick later of BelGioioso Burrata mixture, spread evenly. Drizzle cheese with 1/2 Tbsp. apple glaze. Cut into thirds to serve.

INGREDIENTS

  • 1 lb. Fresh Cherries, pitted and chopped
  • 1 Garlic Clove, minced
  • 1 Medium Jalapeño Pepper, seeded and minced
  • ½ Cup Red Onion, chopped
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. chopped fresh cilantro
  • 2 tsp honey
  • ½ tsp salt

INSTRUCTIONS

  1. In medium bowl, toss all ingredients. Serve with tortilla chips or over grilled chicken, fish or pork. Makes about 2 cups.

Smashed Blackberry, Basil & Camembert Grilled Cheese
Smashed Blackberry, Basil & Camembert Grilled Cheese
Prep Time: 10 minutes
Cook Time: 10 minutes
Serves: 4

INGREDIENTS

  • 2 Packages (6 Oz. each) Fresh Blackberries
  • 8 Thick Slices Multigrain Bread
  • 2 Tbsp Olive Oil
  • 1 Package (8 Oz.) Camembert Cheese, sliced
  • ¼ Cup Fresh Basil, chopped

INSTRUCTIONS

  1. In medium bowl, smash blackberries with a fork until slightly chunky.
  2. Brush 1 side of bread slices with oil; place oiled side down on work surface. Spread 4 bread slices with smashed blackberries; top with cheese, basil and remaining 4 bread slices, oiled side up.
  3. Heat griddle or grill pan over medium-low heat. In batches if necessary, cook sandwiches 10 minutes or until bread is golden brown and cheese melts, turning once and pressing down occasionally with large spatula. Cut sandwiches in half to serve.
